Big Breakfast Pizza
A low carb pizza frittata to be thoroughly enjoyed as a healthy energizing diabetic breakfast meal.

Ingredients
  • 4thin beef sausages– ready cooked – or peperoni
  • 4.2oz cauliflower– chopped small
  • 3 carrot– peeled and grated
  • 2 tomato– diced
  • 1Tablespoon tamari – wheat free soy sauce
  • 6 egg
  • 1/4cup milk– any type you choose
  • black cracked pepper
  • 1teaspoon olive oil– extra virgin
Instructions
  1. Cook the sausages in a pan until cooked. Tip: While they are cooking you can prepare the veggies.
  2. Once they're cooked remove from pan and slice up into pieces.
  3. Add the onions and cauliflower, cook until the cauliflower is starting to soften.
  4. Add the tomatoes and cook for 2 minutes.
  5. Add the carrot, tamari and sausages to the pan and cook until everything looks good, well combined and mostly cooked through.
  6. Beat the eggs with the milk and season generously with pepper.
  7. Even out the mixture in the pan and pour the egg mixture over evenly.
  8. Turn down the heat and allow to cook for 3-4 minutes.
  9. Preheat the broiler (grill) on high.
  10. When it looks almost cooked through, transfer the pan under the broiler (grill) for 1-2 minutes to cook off the top and brown it slightly.
  11. Serve and enjoy.
Recipe Notes

*This is a perfect meal to cook when you have leftover sausages from the night before.

*Use a large non stick pan with a steel handle for going under the broiler/ grill.
