  • 1lb cauliflower– chopped into even bite-size pieces
  • 1/2small red onion– very finely diced
  • 4 eggs– hard boiled, peeled and chopped
  • 1/2 red bell pepper (capsicum)– finely diced
  • 2oz ham– finely diced
  • 2 scallions (spring onions)– sliced
  • 1/2cup mayonnaise
  • 1teaspoon dijon mustard
  • salt and pepper
  1. Place the chopped cauliflower into a steamer and steam for 5-7 minutes, or until the cauliflower is soft when pricked with a fork or knife. Once cooked, place into a colander and leave to cool.
  2. Once cooled, add the cauliflower to a large mixing bowl. Add the rest of the ingredients to the bowl, season with salt and pepper.
  3. Stir everything until it's well combined.
  4. Serve on it's own (it's very flavorful), or serve as a side dish to fish, chicken, turkey or beef.
