Ingredients
  • 8.8oz roast chicken– equivalent to 2 cups – shredded
  • 1 onion– sliced
  • 1 tomato– diced
  • 1 carrot– grated
  • 1 Lebanese cucumber– diced
  • 1/2 red bell pepper– deseeded and sliced
  • 2 teaspoon cajun spice
  • 6leaves iceberg lettuce– peel leaves off whole starting from the base to get lettuce cups
  • 1/4cup hummus – or guacamole if you want a lower carb option
Instructions
  1. Prepare all the ingredients and put into individual bowls
  2. Heat oil in a pan, add onion and saute until browning
  3. Add tomato to the pan and cook for a few minutes until the tomato softens
  4. Stir the chicken through for 30 seconds to 1 minute making sure to coat it in the tomato. If the pan seems a little dry, add about a tablespoon of water to the pan to give it moisture.
  5. When the chicken is heated through, turn off the heat and serve the chicken mix into a bowl
