Chicken Taco Salad
A super duper easy meal with just 5 ingredients. That doesn’t compromise the taste though, this recipe sings simplicity and flavor.

Ingredients
  • 14.1oz chicken breast– cut into small strips
  • 1Tablespoon cajun spice
  • 1large tomato– diced
  • 1large avocado– diced (or replace with grated cheddar cheese)
  • 9.8oz lettuce– equiv. 4 cups, shredded
  • 2teaspoon olive oil
  • 1/2 lemon– cut into wedges
Instructions
  1. Mix chicken strips and spice together, coating the chicken evenly.
  2. Heat oil in a fry pan and when hot, add chicken and fry for 5 minutes, stirring a few times as it cooks. When ready, turn off the heat and sit for a couple of mnutes while you finish preparing the salad.
  3. In 2 large bowls, lay down shredded lettuce, and section tomato and avocado to one third of the dish. Add chicken to the last third and serve as is or with a drizzle of olive oil and lemon juice.
Recipe Notes

Optional – Serve with a salad dressing.

This dish also works well with grated cheese instead of avocado.
