Chicken Chorizo Gumbo
This thick stew, also known as a gumbo, is spiced with the flavor of chorizo sausage and has the undertones of sweet paprika. A bowl of this is perfect for any time of day and is an incredibly satisfying dish.

Ingredients
  • 8oz cured Spanish chorizo sausage– thinly sliced
  • 1.5lb boneless, skinless chicken thighs– diced into bite size pieces
  • 3stalks celery– sliced
  • 1 red bell pepper– deseeded and diced chunky
  • 1 onion– diced
  • 1teaspoon minced garlic
  • 114oz (400g) can diced tomatoes– no added salt
  • 4Tablespoon tomato paste
  • 8oz green beans– ends removed and cut in 3
  • 2Tablespoon sweet paprika
  • 6oz Brussels sprouts– quartered
  • 1/2 cup stock
Instructions
  1. Place all the ingredients into the slow cooker
  2. Stir everything together to combine and place the lid on slow cooker.
  3. Cook for 3 hours on “high” setting, 6 hours on “low” setting. Serve as it is for a deliciously satisfying meal.

STORAGE

This meal can be kept in the refrigerator for 5 days in an airtight container.

To freeze, store in 2 portions in airtight containers for up to 3 months. Defrost at room temperature overnight, then reheat in a pan on the stove top for 3-5 minutes. Or in the microwave for 2.5 – 3 minutes per bowl in high. Add a little liquid (water) if necessary.
