A deliciously simple tasty low carb side salad made with fresh beets, olive oil, vinegar and seasoning.

  1. Grate the fresh beet into a bowl.
  2. Add olive oil and enough vinegar to your desired taste – tangy or less tangy; and season with a little salt and pepper.
  3. Mix to combine well and serve with chicken, meat or fish.
Recipe Notes


  • Season with additional herbs such as basil, thyme and oregano.
  • Sprinkle with sesame seeds.
  • Infuse with crumbled feta cheese.
