Egg Cheese Cucumber Salad
The combination of cucumber, celery, cheese egg and dressing makes a simple low carb lunch meal that is highly satisfying on any occasion.

  • 2Tablespoon mayonnaise
  • 1teaspoon dijon mustard
  • 5 egg– hard boiled, mashed
  • 2.1oz cheddar cheese– grated, approx. 1 cup
  • 2 English/ Lebanese cucumber– quartered lengthways, diced
  • 1stick celery– sliced finely
  • 1 spring onions (scallions)– sliced finely
  • pinch sea salt
  1. Mix the mayonnaise and Dijon mustard together in a small bowl.
  2. Put all the sliced/ mashed ingredients into a large bowl, pour the mayonnaise mixture over the top, along with a sprinkle of salt, then mix to combine well.
  3. Serve into 2 bowls and enjoy.
