Ingredients
  • 1.1lb ground turkey mince
  • 2 onion– sliced finely
  • 1 14 oz / 400 g can diced tomatoes
  • 2lb cauliflower– roughly chopped
  • 1.5Tablespoon butter
  • salt and pepper
  • olive oil
Instructions
  1. Roll the ground turkey mince into 6 balls and set aside on a plate.
  2. Add the chopped cauliflower to a medium pan, cover with water and boil for 7 minutes; when done, drain thoroughly, then mash with butter and season with salt and pepper.
  3. Heat some olive oil in a fry pan or skillet; and once the pan is hot, cook the patties for 2-3 minutes per side, then set aside on the plate.
  4. Add a little more oil to the pan, add the sliced onions and cook for 5 minutes to brown. Stir regularly every 30 seconds to 1 minute and add a little water to the pan if it dries out too much.
  5. Add the canned tomatoes to the pan and simmer for 2 minutes with the onions before adding the turkey patties into the pan.
  6. Simmer the turkey patties in the sauce for around 7 minutes; then turn off the heat, put a lid over the pan and rest for 3 minutes.
  7. Serve the cauliflower mash with two turkey patties and a generous serving of onions and sauce. Enjoy!!
