Ingredients
  • 1/2cup natural peanut butter– crunchy or smooth
  • 1/2cup coconut oil
  • 1/4 cup milk– soy, almond, or coconut milk are fine too
  • 2tsp. equiv. chocolate flavored stevia extract– follow the package label for teaspoon equiv. measurement
  • 1Tablespoon unsweetened cocoa powder– a dutch type will be richer, creamier and less bitter
  • Parchment (baking) paper
Instructions
  1. Place everything into a food processor and blend for 1-2 minutes until well combined. You may need to scrape the edges once or twice.
  2. Line a small container (17cm/6.5″ x 12cm/4.7″) with baking paper, then pour the mixture into the container. Use a spoon or spatula to spread it evenly over the bottom and into the edges.
  3. Place in the fridge for 2 hours, then slice up and eat.
Recipe Notes

When using the chocolate flavored stevia extract, follow the instructions on the label for 1 teaspoon equivalent measurement. It will usually say something like: 5 drops = 1 teaspoon, or 1/3 dropper = 1 teaspoon.

If you don't have the choc flavored stevia, just use normal stevia extract or another sweetener substitute of your choice.

This fudge will store in the fridge for a few weeks in an airtight container. Make a double or triple batch so you have a good supply on hand.
