Ingredients

  • 1 bell pepper – color of your choice, cut in half and deseeded
  • 1 carrot – cut into long sticks
  • 1 Lebanese/ English cucumber – cut into long sticks
  • 6 olives
  • 1 large tomato – cut into wedges

Instructions

  • Fill the halved bell peppers with the fresh ingredients and much away!

    Dear jedha, I have been a type 2 diabetic for 35 yrs and I am on the bovine insulin. Would I have to add any carbs to the diet plan for my insulins.

      Hi Cathy. If by “carbs” you are referring to things like pasta, crackers, or rice, then there is no reason for you to add those to your diet. On the other hand, we strongly encourage everyone to eat plenty of vegetables– which is another food that falls into the carb category! Assuming you are currently eating plenty of vegetables, then you are most likely consuming adequate carbs in your diet.

      If your sugar levels are poorly controlled, then you may want to consider a few things. If you experience many lows, then work with your doctor to reduce your insulin dosage– don’t “add carbs” to balance out the lows. If your levels are frequently elevated this may be a sign you are consuming too many carbs. Reference this list for some of the best foods for diabetes.
