Traveling with Diabetes: 7 Quick Easy Grocery Store Meals

When you’re traveling with diabetes it can be a challenge to stick to your healthy eating routine. But like Beth talked about in this article, there are many things you can do to make sure you’re choosing the best options.

The thing is, although you might like to eat out some of the time, if you make most of your own meals you can not only make sure you stick to your healthy eating routine. But you can also save money. By simply buying some simple items from the grocery store you can actually eat really well.

Here are 7 super easy and fast grocery store meals – I’m talking 10 minute meals, so there’s really no excuses!

By the way, these are great meals whether you’re traveling or staying at home – who doesn’t like fast meals after all. 🙂

7 Quick Easy Grocery Store Meals

1. Rotisserie chicken coleslaw

All you need to make this tasty dish is a rotisserie/ BBQ chicken, a ready made coleslaw packet salad, and jar of the best mayonnaise you can find.

Strip off pieces of the chicken, add it into a large bowl with the coleslaw salad, mix in some mayonnaise and your meal is served.

If by chance you don’t have a large bowl, then mix it together straight in the salad bag.

2. Rotisserie chicken salad

All you need to make this tasty salad s a rotisserie/ BBQ chicken, lettuce, red bell pepper, cucumber and lemon/oil or a salad dressing and you're good to go!

3. Roast beef and vegetable salad

The deli section of the grocery store has lots of items that are diabetic friendly – meats, cheese, roasted vegetables and other assortments.

Grab a bag of mixed lettuce leaves and from the deli section get some olives, roast eggplant, roast capsicum, feta and slices of roast beef. Or, like I did with this dish, I found an antipasto mix already packaged and put that straight in the salad. Delicious!!

Mix it all together for a decadent gourmet roast beef salad. Very satisfying.

4. Super fast salmon salad

A favorite of mine even when at home – even if it might not look so great, it sure tastes good.

Grab a lettuce, some tomato, cucumber, and a tin of salmon to make a super fast salmon salad.

Simply drain the salmon, dice up the cucumber and tomato, shred the lettuce, and mix it all together in a bowl with a drizzle of olive oil and balsamic vinegar for the dressing.

5. Asian shrimp salad

Purchase some fresh shrimp from the deli along with a bag of prepackaged Asian salad mix, some feta cheese, and an avocado or aioli dip from the fridge section.

Mix it all together and away you go.

6. Chicken or roast beef lettuce wrap

I recently showed you how to use lettuce instead of bread for a wrap.

Make a gourmet beef and roast veggie lettuce wrap using similar veggies as the salad above.

Or stick with rotisserie/BBQ chicken some hummus, cheese, tomato and throw on some lettuce leaves. Wrap it up in some foil and you’re good to go.

7. Mediterranean Tuna Salad

In a bowl mix lettuce, tuna, olives, and feta to make a Mediterranean style tuna salad that is so very simple yet satisfying.

Whether you’re traveling with diabetes or just stuck at home, there really are lots of fast meal ideas that are super tasty, satisfying, low carb and easy!

If you make stuff like this yourself when you are traveling, you can not only stick to your healthy eating regime but also save money too.

    Hi Jedha Thank you for the meal plans.
    Recently was diagnosed with Diabetes..have been reading lots of your blogs, happy to say I am glad you are here to help! I felt so alone before I came upon your site.
    Hope I will be able to follow your guide
    Especially with keeping blood sugar normal.
    I love breads,pasta etc so will miss it terrible. I am off sugar and use truvia

      Be patient with yourself, change doesn’t happen overnight and can take some adjustment but you CAN do it!

      And just so you know, we all love bread, pasta etc – it’s just how we’ve been brought up. We can adjust though 🙂
