You can swap out the carrots and pumpkin for other vegetables if you want. Really, you can use whatever you have on hand.
The great benefit of using a crockpot is they make a meal super easy and can be prepared ahead of time. And if you've got a long work day ahead, put it on before you leave and dinner will be cooked when you get home. If it stays on a little longer than 8 hours it will still be fine – the veggies will just be a little more soggy.
This soup can be refrigerated for a few days and even frozen for later use.
