Cheesy Scrambled Eggs w/ Tomato

Ingredients

  • 6 eggs
  • black cracked pepper
  • 1 Tablespoon butter
  • 1 onion – diced
  • 2 oz shredded cheddar cheese
  • 1 oz shredded Parmesan cheese
  • 2 tomato – diced
  • 1 Tablespoon fresh parsley – finely chopped
US Customary – Metric

Instructions

  • Crack the eggs into a bowl, add the cheddar cheese and season generously with pepper. Use a fork to whisk the mixture until well combined.
  • Heat the butter in a pan over medium to medium-high heat. Add the onion and fry for 4-5 minutes until browning, stirring regularly.
  • When you think the onion is cooked enough, add the egg mixture to the pan. Scramble until cooked to your liking.
  • Serve into two bowls. Sprinkle the Parmesan cheese over the top.
  • Top with fresh tomato and parsley.

    Good info thatโ€™s understandable. Iโ€™m encountering higher blood sugars for first time in my life. I gave up sugar years ago, so realized carbs are converting to sugar. The diet plan is a doable for average person with no extra expense.

      There is a lot of confusion surrounding carbs – this is a good article to help clarify some of those myths.
