Bread is a high carb food that is best avoided if youโ€™re diabetic. But that doesnโ€™t mean you have to go without because there are lots of low carb alternative options.

Chicken Lettuce Wrap: Diabetic Lunch Recipe

Take this chicken lettuce wrap as an example.

Instead of using wrap bread, which is high carb and can send your blood sugar soaring. You can use lettuce leaves as the โ€˜wrap breadโ€™ to achieve the same purpose.

Youโ€™ll be surprised how satisfying this is and you wonโ€™t have to worry about your blood sugar soaring.

Top it with any number of fillings you can think of and youโ€™re set for an awesome low carb diabetic lunch youโ€™ll thoroughly enjoy!

Chicken Lettuce Wrap

Using flattened out lettuce leaves makes the perfect โ€˜flat breadโ€™ alternative so you can still enjoy your sandwich wrap for lunch.

Ingredients

  • 6 iceberg lettuce leaves โ€“ peeled whole from the lettuce
  • 2 Tablespoon hummus โ€“ or avocado slices
  • 1 carrot โ€“ grated/ shredded
  • 1 Lebanese/ English cucumber โ€“ sliced
  • 1 tomato โ€“ sliced
  • 1/2 red onion โ€“ sliced
  • 14.1 oz roast chicken Equiv. to 2 cups โ€“ stripped from a BBQ/rotisserie chicken
US Customary โ€“ Metric

Instructions

  • Place a sheet of foil on the bench.
  • Lay out 2 pieces of lettuce, one on top of the other.
  • Layer your wrap starting with hummus, then carrot, cucumber, tomato, and chicken.
  • Put a lettuce leaf over the top of the chicken, then roll the wrap and cover it with foil.

Options/ Alternatives

Cut carbs further

  • Use avocado or cottage cheese instead of hummus
  • Use grated zucchini instead of grated carrot.

Dairy lovers โ€“ add grated cheese or cottage cheese.

Condiments โ€“ add mayonnaise, mustard, pickles or sliced olives.

Meats โ€“ use beef strips or drained-canned salmon or tuna.

Vegetarian โ€“ fry 2 eggs and cut them into strips to replace the chicken.

    Your recipes are very good but the nutritional information would be more help. I also require low sodium and without that info cannot add it to my food plan.

    Tried this wrap today and it was very good. I used cabbage leaves instead of lettuce. I look forward to trying more recipes.

    i just went into your shopping store . how on earth can anyone afford the food . so expensive , i have a family of 5 3 are diabetic , your food is out of reach for most families ..

      Hi Bev, the store is there to offer products to those who may want them. An yes, it is a shame that low carb healthy products are more expensive – it’s a problem in our society!

      Generally we don’t recommend you consume many ‘products’ anyway. We promote a whole foods approach here and majority of our recipes use ingredients you can access from the grocery store.

    I am boarder line bieabecit I have cooked my own food all my live which I thought was healthy now I am at my wits end I don’t know what bread to eat or veg in fact I know nothing but I must say I am a big eater I need help in what I can eat and when
