Brussels sprouts are either a like or dislike food – which one are you?

Chances are if you’re interested in this Baked Brussels Sprouts recipe, you’re a lover of these wonderfully nutritious cruciferous vegetables.

When they are baked they have a smoky flavor with sections of the Brussels that just melt in your mouth. They make a perfect snack or addition to any meal. And work equally as well as the star of the show in a veggie side dish to fish, meat or chicken.

Roasted Brussels Sprouts

Smoky, succulent roasted Brussels sprouts for the perfect accompaniment to any low carb diabetic meal.

Ingredients

  • 1.1 lbs Brussels sprouts - halved
  • 1.5 Tablespoon olive oil
  • Parchment paper
US Customary - Metric

Instructions

  • Preheat oven to 390°F/ 200°C.
  • Place a sheet of parchment (baking) paper on a baking tray.
  • Put the halved Brussels in a bowl, pour over the olive oil and use a spoon or your hands to coat them.
  • Pour onto the tray and spread out evenly.
  • Bake for 25 minutes.
  • Serve with fish, meat, chicken or add to any dish or salad.

    Have had these twice now. First time I overcooked them, they were almost burned, but my husband loved them!. Said they had a nutty flavor. Second time I added parmesan cheese and garlic powder. They were great, too. I do think 1 pound for two people is a little too much. Next time I’m only going to roast 3/4 pound.

    I bought some Brussel sprouts last weekend and tried these about Tuesday. I think they are great. I did try steaming some and think I didn’t get them cooked enough. Didn’t care for them. I did save the “partially cooked” sprouts and put some into some different stir fries as well as a veggie bake. Getting them cooked more did improve them. Roasting will definitely be in the future, other methods well, we’ll see. I did feel they had a pretty immediate effect on morning numbers but too many other things happening right now to be certain.

    I have found that by eating Roasted brussels sprout and cabbage do show lower number for me. My morning numbers are higher and I keep trying to find items that lower my numbers.
