Coleslaw is the type of salad you make in a big batch and eat over a number of days with chicken, egg, beef or fish.
It’s also a great salad to whip up for BBQs or friend/family gatherings. And, thankfully, it’s incredibly easy to make. Much better than the sugar filled coleslaw you buy at the shops.
Just choose a good egg based mayonnaise that is low on added sugar, and you’ll get a delicious coleslaw every time. Or even better, make your own!

Easy Coleslaw
Coleslaw makes the perfect salad to prep in bulk or serve at a family gathering. Homemade is the only way to go.
Servings: 6 serves

Ingredients
- 8.8 oz cabbage – equiv. 1/4 cabbage
- 1.5 carrot
- 1 red bell pepper
- 3 spring onions (scallions) – or 1/4 red onion
- 3/4 cup mayonnaise
Instructions
- Grate the carrot into a large mixing bowl
- Core and deseed the bell pepper (capsicum), then dice it and place in bowl
- Shred the cabbage very finely, then chop it cross ways as well, then place in bowl
- Finely slice the spring onions or dice the red onion very finely, place in bowl
- Mix all together
- Stir in the mayonnaise

OPTIONS – add mustard or spices for additional or alternative flavors.

I’m looking at the Easy coleslaw Low Carb recipe – it looks delicious. I just started an insulin pump which I know will benefit me greatly but also love your site. Is there somewhere I can join? Is there a fee? I have the most difficult time trying to figure out what to eat.
Can you tell me what the serving size is for the coleslaw recipe?

Hi Christine, The coleslaw says 6 serves, it’s at the top of the recipe. You can find lots of useful info on our site and we have a range of membership options as well. Check those out over here. Just remember that if you aim to lower carb intake to lower blood sugar, be sure to work with your doctor as medications will need to be adjusted as you change your diet.
