We all love pizza right?

And we’ve shared several pizza options with you, including:

  • Low carb pizza crust
  • Zucchini boat pizzas
  • Cauliflower pizza crust

And now, we’ve got eggplant pizza on the menu!

Eggplant makes a great pizza crust alternative. It’s low carb and has a delicious texture and flavor.

Top it with all your favorite pizza toppings and get creative with anything you desire. You’ll definitely love eating these beauties.

Here are a couple of options to try.

Tomato Basil Eggplant Pizza

  • Use a sharp knife and slice a large eggplant into slices.
  • Salt the slices and let sit for at least 30 minutes, then pat dry.
  • Top your eggplant slices with halved cherry tomatoes, some fresh basil leaves and grated cheddar or mozzarella cheese.
  • Cook in 400°F/ 200°C oven for around 20 minutes.

Olive Feta Eggplant Pizza

  • Use a sharp knife and slice a large eggplant into slices.
  • Salt the slices and let sit for at least 30 minutes, then pat dry.
  • Top your eggplant slices with tomato paste, diced feta cheese, finely sliced spring onions/ scallions, sliced olives and pepper.
  • Cook in 400°F/ 200°C oven for around 20 minutes.

Get creative, top with ham, pepperoni, chicken bits, mushroom, sundried tomatoes, different types of low carb vegetables and cheeses.

Kitchen Tools
