Eggplant makes a great pizza crust alternative. It’s low carb and has a delicious texture and flavor.
Top it with all your favorite pizza toppings and get creative with anything you desire. You’ll definitely love eating these beauties.
Here are a couple of options to try.
Tomato Basil Eggplant Pizza

- Use a sharp knife and slice a large eggplant into slices.
- Salt the slices and let sit for at least 30 minutes, then pat dry.
- Top your eggplant slices with halved cherry tomatoes, some fresh basil leaves and grated cheddar or mozzarella cheese.
- Cook in 400°F/ 200°C oven for around 20 minutes.
Olive Feta Eggplant Pizza

- Use a sharp knife and slice a large eggplant into slices.
- Salt the slices and let sit for at least 30 minutes, then pat dry.
- Top your eggplant slices with tomato paste, diced feta cheese, finely sliced spring onions/ scallions, sliced olives and pepper.
- Cook in 400°F/ 200°C oven for around 20 minutes.
Get creative, top with ham, pepperoni, chicken bits, mushroom, sundried tomatoes, different types of low carb vegetables and cheeses.
