This does contain some starchy vegetables that are slightly higher in carbs than the non starchy best vegetable options. However, the whole soup still comes in at 14 g net carbs, which is acceptable.

You can swap out the carrots and pumpkin for other vegetables if you want. Really, you can use whatever you have on hand.

The great benefit of using a crockpot is they make a meal super easy and can be prepared ahead of time. And if you’ve got a long work day ahead, put it on before you leave and dinner will be cooked when you get home. If it stays on a little longer than 8 hours it will still be fine – the veggies will just be a little more soggy.

This soup can be refrigerated for a few days and even frozen for later use.

Ingredients

  • 1 onion – diced
  • 2 carrot – halved and sliced fairly chunky
  • 1/4 cauliflower – roughly chopped
  • 17.6 oz pumpkin – diced
  • 21.1 oz chicken breast – diced
  • 1.7 oz wakame seaweed – cut up into very small pieces – you don’t have to include this ingredient
  • 4 cups stock
US Customary – Metric

Instructions

  • Throw it all in the slow cooker, turn on low for 6-8 hours (or 4 hours on high).
  • It’s that easy!
