Chicken Burrito Recipe

Ingredients

  • 8.8 oz roast chicken – equivalent to 2 cups – shredded
  • 1 onion – sliced
  • 1 tomato – diced
  • 1 carrot – grated
  • 1 Lebanese cucumber – diced
  • 1/2 red bell pepper – deseeded and sliced
  • 2 teaspoon cajun spice
  • 6 leaves iceberg lettuce – peel leaves off whole starting from the base to get lettuce cups
  • 1/4 cup hummus – or guacamole if you want a lower carb option

Instructions

  • Prepare all the ingredients and put into individual bowls
  • Heat oil in a pan, add onion and saute until browning
  • Add tomato to the pan and cook for a few minutes until the tomato softens
  • Stir the chicken through for 30 seconds to 1 minute making sure to coat it in the tomato. If the pan seems a little dry, add about a tablespoon of water to the pan to give it moisture.
  • When the chicken is heated through, turn off the heat and serve the chicken mix into a bowl
