Chicken Burrito Recipe

Ingredients
- 8.8 oz roast chicken – equivalent to 2 cups – shredded
- 1 onion – sliced
- 1 tomato – diced
- 1 carrot – grated
- 1 Lebanese cucumber – diced
- 1/2 red bell pepper – deseeded and sliced
- 2 teaspoon cajun spice
- 6 leaves iceberg lettuce – peel leaves off whole starting from the base to get lettuce cups
- 1/4 cup hummus – or guacamole if you want a lower carb option
Instructions
- Prepare all the ingredients and put into individual bowls
- Heat oil in a pan, add onion and saute until browning
- Add tomato to the pan and cook for a few minutes until the tomato softens
- Stir the chicken through for 30 seconds to 1 minute making sure to coat it in the tomato. If the pan seems a little dry, add about a tablespoon of water to the pan to give it moisture.
- When the chicken is heated through, turn off the heat and serve the chicken mix into a bowl
