This easy slow cooker Chicken Cacciatore is a super simple dish with the subtle flavors of tomato, olives and oregano, served with a low carb side of beans and carrots.
Slow cooker meals are very convenient because they can be cooking while you’re at work or play. You arrive home and dinner is cooked. They can also be cooked in larger batches and usually make great frozen meals as well.
Serve
You can also serve this with zucchini noodles, low carb pasta, or any vegetable side of your choice.
Lower Carb Count
If you want to lower the carb count further, skip the carrot and include broccoli or more green beans instead.
Storage
This chicken cacciatore can be portioned into containers and frozen for up to 3 months. Defrost overnight, then reheat on the stove top over gentle heat for 5-6 minutes, or in the microwave for 3-4 minutes.
Easy Slow Cooker Chicken Cacciatore
Ingredients
- 1.8 lb boneless, skinless chicken thighs
- 1 onion - sliced
- 1 teaspoon minced garlic
- 1 14 oz can diced tomatoes - no added salt
- 1 teaspoon oregano
- 6 carrot - cut into chunks
- 8 oz green beans - ends removed
- 9 oz mushrooms - sliced
- 16 pitted kalamata olives - sliced
- 1 Tablespoon arrowroot flour
- 1 Tablespoon Water
Instructions
- Heat a pan and fry off the chicken thighs for 2-3 minutes per side to lightly brown; then add them to the bottom of the slow cooker.
- Top with onion, oregano, garlic and diced tomatoes and use a spoon to spread the mixture evenly.
- Add the carrots and beans on top but do not mix in.
- Cook for 7-8 hours on low, 4-5 on high.
- One hour before serving, remove the carrots and beans and set them aside on a plate or bowl. Add the mushrooms and olives and to the cooker and stir them into the top of the tomato sauce mix. Do not disturb the chicken.
- Before serving, mix the arrowroot and water together and pour into the sauce around the edges of the cooker. Use a spoon to gently mix it in around the edges to thicken the sauce, trying not to disturb the chicken too much.
- Heat the carrot and beans for 2 minutes in the microwave; then serve with the chicken cacciatore mixture.

You don’t need a fancy slow cooker. A low cost low-high setting cooker will do the trick.
And a set of handy measuring spoons and measuring cups are probably one of the most used kitchen items

Hi, I am doing all I can to fix nutritious meals for Bruce since his recent type 2 diabeties diagnosis. I struggle with what to substitute pasta and potatoes with. I found GREENFIELD pasta and measure it out carefully. Working on sweet potatoes also. He never ate them before. I like this recipe and will try it soon. I guess what I am trying to say he was never a veggie eater but now I am trying them all a little at a time. Thanks for any suggestions. Becky
