We’re working on a 5 Ingredients Dinner Menu right now and sharing a few while we’re at it. Last week it was this Chicken Massaman Curry. Now it’s this easy Chicken Taco Salad.
Both just 5 ingredients. Both super duper easy to make. Both incredibly deeeelicious!
The only exclusions to the 5 ingredients are:
- Olive oil
- Lemon
- Salt
- Pepper
- Water
These are 5 common staples that most people tend to have on hand so our 5 ingredients recipe don’t include these in the ingredients.
Chicken Taco Salad
Ingredients
- 14 oz chicken breast - cut into small strips
- 1 Tablespoon cajun spice
- 1 large tomato - diced
- 1 large avocado - diced (or replace with grated cheddar cheese)
- 9.8 oz lettuce - equiv. 4 cups, shredded
- 2 teaspoon olive oil
- 1/2 lemon - cut into wedges
Instructions
- Mix chicken strips and spice together, coating the chicken evenly.
- Heat oil in a fry pan and when hot, add chicken and fry for 5 minutes, stirring a few times as it cooks. When ready, turn off the heat and sit for a couple of mnutes while you finish preparing the salad.
- In 2 large bowls, lay down shredded lettuce, and section tomato and avocado to one third of the dish. Add chicken to the last third and serve as is or with a drizzle of olive oil and lemon juice.

Essential Kitchen Items
Sharp knives are the most important staple in the kitchen. Sharp knives make it easier to chop and lead to less injuries too, believe it or not! Keep a good grater handy for grating veggies and cheese. And have some nice serving bowls handy for your salads. If you prefer salad dressings, get yourself a nice glass dispenser and whip up a simple homemade blend of olive oil and balsamic vinegar.

Can I eat pork chops or lamb chops if I am on diabetes (on the edge)

Yes Charles, you can. Though they are fattier cuts so depending how the rest of your diet is, don’t go chowing down on them too often.
