Low carb chocolate cake for one

Who said you can’t enjoy a rich and decadent chocolate cake when you’re diabetic?

This solo recipe takes less than 5 minutes to make and will rock your socks off!

It’s 100% sugar free, using stevia for sweetener. In the picture it’s topped with plain Greek yogurt but you could also use whipped cream or coconut cream.

The cake itself is already moist but the topping combined with the chocolate syrup gives it that extra mouthwatering appeal.

Low Carb Diabetic Chocolate Cake Recipe

A moist, rich and decadent low carb diabetic chocolate cake recipe suited for one and made in less than 5 minutes. Indulge yourself!

Ingredients

Cake

  • 1 Tablespoon coconut flour
  • 1/4 teaspoon baking powder
  • 1 Tablespoon unsweetened cocoa powder
  • dash salt
  • 1 egg
  • 1 Tablespoon unsweetened almond milk
  • 1/4 teaspoon chocolate flavored stevia extract

Choc Syrup

  • 1/2 Tablespoon coconut oil - melted
  • 1/2 Tablespoon unsweetened cocoa powder
  • 1/8 teaspoon chocolate flavored stevia extract

Extras

  • 2 Tablespoon Plain Greek Yogurt
  • 1 teaspoon desiccated coconut

Instructions

  • Place all the dry cake ingredients into a small bowl, followed by the wet ingredients and stir well to combine.
  • Pour into a separate small bowl and put in the microwave on high for 1.5 minutes. The size of the dish you put the mixture in will dictate the shape of the cake.
  • When the cake is ready, remove onto a wire rack to cool.
  • Add the syrup ingredients to the bowl and stir to combine.
  • Top your cake with yogurt or cream and drizzle with the syrup and a sprinkle of coconut. This cake can be eaten hot or cold.

Notes

OPTIONAL
  • Add sliced fresh strawberries on top
  • Sprinkle with nuts
  • Sprinkle with cinnamon
SWEETENER ALTERNATIVES
If you don't like stevia, you can swap it for tagatose, erythritol or monk fruit.

You’ll need a small bowl for mixing and a small bowl for cooking it in the microwave. Measuring spoons are essential and some serving bowls and spoons.

      You can skip the chocolate stevia and just use any safe sweetener alternative.

    My grandson recently dx as diabetic…would like to make cupcakes….how would I bake this recipe and make a larger batch for his birthday? Also where to find chocolate stevie flavoring?

      We are working on a cake recipe book for this exact reason – birthdays and celebrations. In the meantime you could try this carrot cake/loaf as a base. You could add cocoa and chocolate stevia to this for a choc cake of sorts. The carrot cake itself is also delicious. You can only get choc stevia from Amazon, other online stores and maybe some health food stores.

    Can I buy small amounts of coconut flour at a health food store? prefer not to purchase a large amount if i can avoid it. Thanks

      Some health food stores yes, or you can purchase it at most supermarkets also. It will keep for months in the fridge.

    You advise not to use artificial sweeteners. Why does this recipe contain Stevia ? I’m concerned that I don’t want to purchase the menu plans I was going to because they may include other ingredients you Advise not to use. I really like the way you teach and your advice lines up with what I know to work well for me. I have Gestational. Thank you.

      Stevia is not considered an artificial sweetener per se. You can read more about artificial sweeteners here and stevia here. Two very different substances with very different research behind them. Our recipes don’t contain ingredients we don’t recommend and stevia is the only sweetener we use in our recipes. When we make product recommendations, we aim to look for the best options with the cleanest possible ingredients. Sometimes these aren’t always 100% ideal but not everyone wants to make everything from scratch, which is why we sometimes provide options and alternatives.

        Lol, I cheat so often with chocolate cakes that i’m surprised i’m still alive. it’s true after dinner i’ll sneak in a large serving of cake and end up asleep in no time while watching the news. I feel like i’m in a diabetic coma. Anyway, perhaps I should try this. not sure why all my words are are starting in caps…
