Ingredients

Cake

  • 1.5 cups blanched almond flour
  • 6 Tablespoon unsweetened cocoa powder
  • 2 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup milk
  • 3 large eggs
  • 1/3 cup granular truvia/natvia sweetener – or your preferred sweetener, see link below
  • 1.5 teaspoon vanilla extract
  • parchment (baking) paper

Frosting

  • 8 oz cream cheese – (225g)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup granular truvia/natvia sweetener
  • 1 teaspoon vanilla extract
  • 2 Tablespoon milk
US Customary – Metric

Instructions

Cake

  • Preheat oven to 350F/180C.
  • Line an 8-inch/ 20cm cake pan with parchment paper
  • Add all the ingredients to a bowl and stir until combined well.
  • Pour into the cake pan and spread evenly.
  • Place on the middle rack in oven and bake for 15 minutes.
  • Remove from the oven. Remove the cake from the pan by lifting out the parchment paper, and place on a wire rack to cool.

Frosting

  • Once the cake is cooled, stir all the frosting ingredients together until they are mixed thoroughly.
  • Spread the rich icing over the top and sides of the cake.
  • Slice and enjoy!

Notes

A rich Dutch cocoa is the best type to use as they are less bitter than some cocoas.

*Store in the fridge for up to 10 days.
If you can’t get blanched almond flour, regular almond flour will be fine too. Alternatively, you can blanch plain almond flour over a low heat for a few minutes before adding it to the mixing bowl. 
TOPPINGS
The cake is decadently rich as is, but you can add strawberries, blueberries or cream for that extra experience!

      You can skip the chocolate stevia and just use any safe sweetener alternative.

    My grandson recently dx as diabetic…would like to make cupcakes….how would I bake this recipe and make a larger batch for his birthday? Also where to find chocolate stevie flavoring?

      We are working on a cake recipe book for this exact reason – birthdays and celebrations. In the meantime you could try this carrot cake/loaf as a base. You could add cocoa and chocolate stevia to this for a choc cake of sorts. The carrot cake itself is also delicious. You can only get choc stevia from Amazon, other online stores and maybe some health food stores.

    Can I buy small amounts of coconut flour at a health food store? prefer not to purchase a large amount if i can avoid it. Thanks

      Some health food stores yes, or you can purchase it at most supermarkets also. It will keep for months in the fridge.

    You advise not to use artificial sweeteners. Why does this recipe contain Stevia ? I’m concerned that I don’t want to purchase the menu plans I was going to because they may include other ingredients you Advise not to use. I really like the way you teach and your advice lines up with what I know to work well for me. I have Gestational. Thank you.

      Stevia is not considered an artificial sweetener per se. You can read more about artificial sweeteners here and stevia here. Two very different substances with very different research behind them. Our recipes don’t contain ingredients we don’t recommend and stevia is the only sweetener we use in our recipes. When we make product recommendations, we aim to look for the best options with the cleanest possible ingredients. Sometimes these aren’t always 100% ideal but not everyone wants to make everything from scratch, which is why we sometimes provide options and alternatives.

        Lol, I cheat so often with chocolate cakes that i’m surprised i’m still alive. it’s true after dinner i’ll sneak in a large serving of cake and end up asleep in no time while watching the news. I feel like i’m in a diabetic coma. Anyway, perhaps I should try this. not sure why all my words are are starting in caps…
