Ingredients
Cake
- 1.5 cups blanched almond flour
- 6 Tablespoon unsweetened cocoa powder
- 2 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/3 cup milk
- 3 large eggs
- 1/3 cup granular truvia/natvia sweetener – or your preferred sweetener, see link below
- 1.5 teaspoon vanilla extract
- parchment (baking) paper
Frosting
- 8 oz cream cheese – (225g)
- 1/4 cup unsweetened cocoa powder
- 1/4 cup granular truvia/natvia sweetener
- 1 teaspoon vanilla extract
- 2 Tablespoon milk
Instructions
Cake
- Preheat oven to 350F/180C.
- Line an 8-inch/ 20cm cake pan with parchment paper
- Add all the ingredients to a bowl and stir until combined well.
- Pour into the cake pan and spread evenly.
- Place on the middle rack in oven and bake for 15 minutes.
- Remove from the oven. Remove the cake from the pan by lifting out the parchment paper, and place on a wire rack to cool.
Frosting
- Once the cake is cooled, stir all the frosting ingredients together until they are mixed thoroughly.
- Spread the rich icing over the top and sides of the cake.
- Slice and enjoy!

We are working on a cake recipe book for this exact reason – birthdays and celebrations. In the meantime you could try this carrot cake/loaf as a base. You could add cocoa and chocolate stevia to this for a choc cake of sorts. The carrot cake itself is also delicious. You can only get choc stevia from Amazon, other online stores and maybe some health food stores.

Stevia is not considered an artificial sweetener per se. You can read more about artificial sweeteners here and stevia here. Two very different substances with very different research behind them. Our recipes don’t contain ingredients we don’t recommend and stevia is the only sweetener we use in our recipes. When we make product recommendations, we aim to look for the best options with the cleanest possible ingredients. Sometimes these aren’t always 100% ideal but not everyone wants to make everything from scratch, which is why we sometimes provide options and alternatives.
