Recently we’ve been covering the topic of fast food and diabetes and giving you some ‘junk food’ type dishes to satisfy those fast food cravings. We’ve got a smorgasbord of low carb pizza recipes coming up next week so be sure to stay tuned for those.

These are so, so delicious! There’s just something about the herb and nut mix that makes these super tasty. Served with a side of sugar free chili sauce makes them the perfect snack – or well – meal actually, because they are very filling.

Herb Nut Crusted Chicken Nuggets

Delicious low carb chicken nuggets coated in nuts and roasted until golden brown makes the perfect diabetic snack or meal.

Ingredients

  • 8.8 oz chicken breast – sliced into strips
  • 1 egg
  • 1/4 cup almonds
  • 1/4 cup macadamia nuts
  • 1/2 teaspoon dried mixed herbs
  • 2 teaspoons paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black cracked pepper

Instructions

  • Preheat oven to 375°F / 190°C.
  • Season the chicken breast strips with some salt and pepper and tenderize with a fork.
  • Place the almonds and macadamia nuts into a food processor and pulse for 1 minute to chop the nuts. You want them fairly fine but not like a flour.
  • Prep breading stations – In one bowl or container, whisk eggs with some salt and pepper. Combine almond/ macadamia mix with herbs, paprika, salt, and pepper in a container with a lid or put them in a Ziploc bag.
  • Dip chicken into eggs to coat on both sides, drain slightly; then toss into the breading/nut mixture. Cover with lid or zip bag and shake until the mixture fully coats the chicken strips.
  • Brush baking tray with some oil or line with parchment paper and spread chicken out on the tray. Bake for 15 minutes, until chicken is done and golden brown.

    Ella BG day 16 morning fasting 111
    BF ate 2eggs 2 sausages, 1 english muffin
    After breaksfast BG was 217
    Lunch ate a bowl of Aztec soup BG 111
    Dinner ate a nig bowl of salad 142 and i exercised before bed .thank you again.
    I have a question can i eat the low carb
    bread that you make yourself. that you have is that carb friendly.

      Yes, our breads are a perfect addition and many are super easy to make too. The focaccia would replace the english muffin nicely and help keep those numbers a bit lower after breakfast.

    I live in Panama and I have never found macadamia nuts, is it possible to substitute another nut to go with the almonds? My partner is prediabetic and after following the guidelines on your site since January, we are hoping for good blood results in a week or two, but in the meantime he’s lost over 24 lbs in weight. Thanks for providing such an informative website.

      Sounds like great progress so far! Certainly an option is to just replace the macadamia nuts with additional almonds, but if you’re looking for more variety you might try experimenting with either walnuts or pecans- or whatever nut is more readily available to you!

        Got his results and are so pleased, he’s no longer pre diabetic ane now along with 30lb weight loss his triglycerides have dropped considerably, his good cholesterol has increased and his bad cholesterol has decreased. Thanks again for such an informative site.

    Your herb mixture in recipe for Baked Chicken Nuggets is not clear as to WHAT HERBS TO USE!
    Could you please identify each herb Thank you!!!!

      Use a mixed herb blend such as Italian herbs, Herbes de Provence.
