1. Creamy Mustard Chicken Noodles

Konjac noodles are a great substitute for all your noodle recipes. Wherever a dish calls for pasta or noodles and you need a low carb replacement, just use konjac noodles instead.

I love this recipe because it’s easy to make in just 15 minutes, has a creamy delicious flavor, and is very satisfying too – using konjac noodles of course. :)

2. Chicken Cashew Veggie Stir Fry

This is a great veggie packed meal that lets the vegetables shine with their own natural flavor.

If you’re not a big veggie lover, I get that. When you haven’t been used to eating veggies all that much it might seem like a dish like this is not going to be boring. But you will be surprised at how much you’ll enjoy it.

You can really use whatever vegetables you have on hand to make this dish. So if you find yourself with something else left in the fridge, just throw it in the mix and use it up.

3. Olive Herb Chicken Spaghetti

This takes just 15 minutes to make, is full of vitamins and minerals. It contains healthy monounsaturated fats in the form of olive oil and olives. And the flavor, well, it’s delicious.

A light overtone of oregano combined with the aroma and slightly tart taste of the kalamata olives makes this one a winner.

4. Chicken Lettuce Wrap

Bread is a high carb food that is best avoided if you’re diabetic. But that doesn’t mean you have to go without because there are lots of low carb alternative options.

Instead of using wrap bread, which is high carb, we use lettuce leaves as the ‘wrap bread’ to achieve the same purpose. You’ll be surprised how satisfying this is and you won’t have to worry about your blood sugar soaring.

6. Clean Eating Crockpot Chicken Soup

The great benefit of using a crockpot is they make a meal super easy and can be prepared ahead of time. And if you’ve got a long work day ahead, put it on before you leave and dinner will be cooked when you get home. If it stays on a little longer than 8 hours it will still be fine – the veggies will just be a little more soggy.

7. Parcel Baked Sandwich (or Salad) Chicken

Succulent, moist, tender parcel baked chicken breast to eat with your favorite side dish or salad.

Cut into slices and store in an airtight container to use as a sandwich chicken with your favorite low cab breads. Or just grab a slice when you’re hungry and need a snack.
