Chicken Massaman Curry (5 Ingredients)

This Chicken Massamman Curry is just one example of what’s in store. And hey, we wanted to share a few of these awesome recipes for you to try.

The only exclusions to the 5 ingredients are:

  • Olive oil
  • Lemon
  • Salt
  • Pepper
  • Water

These are 5 common staples that most people tend to have on hand so our 5 ingredients recipe don’t include these in the ingredients.

Chicken Massaman Curry (5 Ingredients)

This meal is incredibly enjoyable. The deep curry flavor of the meal served on top of a bed of low carb cauliflower rice. Just doesn’t get much better than this.

Ingredients

  • 1 Tablespoon massaman curry paste
  • 10.5 oz chicken breast – sliced into thin strips
  • 6.7 fl.oz coconut milk
  • 2 zucchini – sliced
  • 2 N/A serves cauliflower rice
  • 1/2 cup Water
  • Olive oil for cooking

Instructions

  • Put the oil, 1/2 Tbsp of curry paste and zucchini into a large fry pan; stir to coat in the curry paste; add the stock, then simmer over a low heat for 4-5 minutes until the zucchini is soft.
  • Remove from the pan and set aside in a bowl.
  • Turn the heat up to high, add a little more oil to the pan, add the chicken, the rest of the curry paste, and cook for about 5 minutes until the chicken is almost cooked.
  • Add the zucchini back to the pan, stir through the coconut milk and simmer for a further 2-3 minutes.
  • Try to multi-task and cook your cauliflower rice in between simmering. Then serve your curry with cauli rice and optional salad greens.

    Please recommend a healthy brand of the massaman curry paste and where to obtain it.

      Hi Priya, there are a lot of good brands out there and it depends on what’s available to you and where you are trying to do your shopping. Check what’s available at your local grocery store (check the international food isle), or else it can certainly be ordered on-line on a site such as Amazon.

        What is the difference between Massaman paste and the sauce? I would still like a couple of recommendations from you, I am looking for a healthier version. I can easily order from Amazon. Thank you.

          I’ve never seen a massaman sauce Priya so can’t offer any light on the differences. We don’t have a specific brand recommendation. Massaman curry paste is easily accessible in any supermarket, generally sold in small jars. Most options are made up of oils, herbs and spices, they are low carb, suitable for use, and have similar flavors.

      Good pick up Diane, there was an error in calculation and has been corrected. We’ve actually got a post coming soon on sodium because all foods contain sodium, which is different to consuming salt. The major source of sodium in this recipe is the curry paste, try to get a lower sodium one if you want to minimize salt intake.
