This thick stew is spiced with the flavor of chorizo sausage and has the undertones of sweet paprika. A bowl of this is perfect for any time of day and is an incredibly satisfying dish.
Best of all, if you don’t like veggies, this is the perfect type of dish to hide them as they’ll be coated in the deliciously rich flavor. And interestingly, even people who haven’t tried or usually don’t like Brussels sprouts have said they liked them in this dish – be brave and give it a try!
It’s also low in carbs, like all our recipes here, perfect for keeping blood sugar numbers in check.
RECIPE
Chicken Chorizo Stew
Ingredients
- 8 oz cured Spanish chorizo sausage - thinly sliced
- 1.5 lb boneless, skinless chicken thighs - diced into bite size pieces
- 3 stalks celery - sliced
- 1 red bell pepper - deseeded and diced chunky
- 1 onion - diced
- 1 teaspoon minced garlic
- 1 14oz (400g) can diced tomatoes - no added salt
- 4 Tablespoon tomato paste
- 8 oz green beans - ends removed and cut in 3
- 2 Tablespoon sweet paprika
- 6 oz Brussels sprouts - quartered
- 1/2 cup stock
Instructions
- Place all the ingredients into the slow cooker
- Stir everything together to combine and place the lid on slow cooker.
- Cook for 3 hours on "high" setting, 6 hours on "low" setting. Serve as it is for a deliciously satisfying meal.
Notes
KITCHEN TOOLS
You don’t need a fancy slow cooker. A low cost low-high setting cooker will do the trick.
And a set of handy measuring spoons and measuring cups are probably one of the most used kitchen items

You listed using “stock” in the recipe. I have chicken stock, turkey stock, beef stock, vegetable stock, and fish stock. I’m assuming you mean chicken stock?

Any type except fish will work – chicken, veg or beef. You often find this is the case with many meals – stock can be transferable.

Of course.. feel free to substitute ANY non-starchy vegetable or just add a few extra peppers. Maybe you can sneak a few brussel sprouts into there down the road to see if preparing them differently changes your perspective on them. Let us know how you like the recipe.

Sorry Kisha, we don’t calculate all our recipes using cup measurements, it would be too difficult and time consuming. If you make the full recipe and divide it by 4 portions, you will get the estimated serving size.

I am a single man with t2 diabetes. I get a 4:00 am to go to work and take my breakfast and lunch to work. I normally get it ready the night before. I am looking for some low carb meals that are very easy to get ready and that will keep for a long period of time in the frig. I have had do luck finding them with out buying all sorts of ingredients that are too complicated to make. Can you help?

That is too many carbs for a person with diabetes for one meal. Diabetics are supposed to count total carbs, which in this recipe is 20. 20 is the total carb count for an entire day for people on a low carb diet.

Not everyone follows a VERY low carb diet Madeleine, which is what 20 g day carbs is. A low carb diet consists of around 50-80 g carbs per day, which most research shows works for people with diabetes. Also, there are no “bad” foods in this meal, only non-starchy veg and proteins, which generally don’t spike blood sugar. Still, if it’s too many carbs for you, don’t eat it, everyone is different.
