Fresh beet salad

Beets (aka beetroot) are classified as a “starchy carb.” But even though they are a little higher in carbs than other non starchy vegetables, they are not so high that they need to be omitted from a low carb diet.

Beets also offer high amounts of vitamins, flavonoids and phytochemicals that are extremely beneficial to your health. You only have to look at their vibrant color to see they offer elements that many other foods don’t. Plus that lovely color adds more depth to any meal.

Beets have a wonderful naturally sweet flavor and can be used raw, steamed, boiled or roasted. Here we have a super simple salad made with raw grated beets.

Easy Beet Side Salad

A deliciously simple tasty low carb side salad made with fresh beets, olive oil, vinegar and seasoning.

Servings: 2 people
Calories: 91kcal
Carbs: 4g
Net Carbs: 3g

Ingredients

  • 1 fresh beets - peeled
  • 1-2 Tablespoon apple cider vinegar
  • 1 Tablespoon olive oil
  • salt and pepper - to taste

Instructions

  • Grate the fresh beet into a bowl.
  • Add olive oil and enough vinegar to your desired taste - tangy or less tangy; and season with a little salt and pepper.
  • Mix to combine well and serve with chicken, meat or fish.

Notes

OPTIONS
  • Season with additional herbs such as basil, thyme and oregano.
  • Sprinkle with sesame seeds.
  • Infuse with crumbled feta cheese.
STORAGE
Will store in the fridge for a few days.
