This dish is so incredibly tasty that you won’t notice the missing ‘traditional’ pasta.
You see, to make this dish low carb we’ve used steamed cabbage noodles.
Just like pasta, these strips of steamed cabbage get coated in the creamy carbonara sauce, with the benefit of keeping blood sugars in good check, without all those excess carbs.
And, best of all, like many of the meals here at Diabetes Meal Plans, it can be made in 15 minutes or less – the kind of meals we all want more of, wouldn’t you agree?!

Chicken carbonara pasta-ish dish
Ingredients
- 2 skinless chicken thighs
- 1 red onion
- 3 strips bacon
- 3 Tablespoon dry white wine
- 1/2 cup coconut cream
- 1 egg
- 3.5 oz green cabbage – equivalent to 3 cups – shredded
- salt and pepper
Instructions
- Heat garlic oil in a pan over a medium heat, add onion and saute until browning
- Add bacon and continue to cook for a few minutes, stirring occasionally
- Add the chicken to the pan and stir in, then allow to cook for about 1 minute
- Stir it and let cook for another minute or so
- Give it a bit of a stir, then add 3 capfuls of white wine into the pan, and a generous amount of pepper and a bit of salt, then stir it into the mixture
- Now add the coconut cream, let it simmer for 1-2 minutes then turn the heat off
- Allow to sit for 3-5 minutes while you prepare plates and tidy up
- Beat the egg in a bowl, then just before you’re ready to serve, turn the heat on low under the pan, stir in the egg, then turn off the heat again. You don’t want the egg to scrmable in the sauce but just thicken it. So be careful not to boil it or heat it too much
- Using tongs, place cabbage pasta alternative into 2 bowls, then spoon the mixture on top for a delightful and tasty dish
Notes
Options/ Alternatives
Noodle/ Pasta options – if you don’t like cabbage use zucchini noodles, konjac noodles or even a low carb pasta.
Dairy lovers – top this dish with grated Parmesan or cheddar cheese.
Storage – this will store in a container for a couple of days in the fridge. You can then reheat it in the microwave. Add a bit of water to the sauce to reheat.

1/4 cup of coconut flour or almond flour gives me enough bread for. the week. I consume sparingly enough cauliflower and Broccoli. I also eat lot of green leaf stuff and aspargus too. I do not care for sodas. May be, rarely a drink. I do make use of apple cider vinegar and do consume lemons. I am diabetic for the last 40 years or so.These days my A1C is 5.9. Please help me in getting better and maintain the results
ref. sugar in control. How ever I do eat cabbage but very much. I also consume Salmon,Talapia and chicken. I am not fond of beef products and may be rarely.

Jedha. LOL, you know, all that cholesterol info may have some validity. With losing 18 lbs and substantially changing my diet, my numbers have not come down. I’m on two cholesterol meds to counter the chol’ factory I have inside me. Total is just over 3 with the good stuff at 1.68, Dr. is happy with that.
As to my sugar, wife made oatmeal/apple cookies with Stevia, they’re good. Ate three and had some egg noodles as a side for dinner. I was at 5.1 that morning, the next at 6. Yesterday I had three more cookies but no pasta, this am, 5.3

Looks good but where does all that cholesterol come from? Have to pass on that one, my reading this AM was 5.1, cold almost gone, heart rate back to normal.
