my wife introduced me to pumpkin seeds and I’m hooked on them. I find myself craving them and after I have some I find I feel better, have more energy and just feel better all around. my wife tells me that’s because there’s something in the seeds that my body needs. I am a type 2 diabetic and she read that pumpkin seeds are good for diabetics so that’s why she decided to have me try them. They do seem to help my sugar levels but since I just started we’ll see.

I have read this blog probably 3 times now. When something sounds this good it very well could be. The first thing I learned is I must ration them carefully as I could eat a package of them, 9.5 servings, in one sitting. I didn’t, but it would have been easy. I do have a small container That I put 1/4 cup of seeds in and that’s what I’ll eat today. They are great just by themselves however my favorite is to put them on a serving of cottage cheese and scoop them with veggie sticks.
I have noticed since starting to have them almost every day my blood glucose has dropped from the 150’s range to the 140’s range. I know I’m doing other things to help drop the glucose, but I think this is the only new food I have added. Coincidence or could they make that kind of difference?

Who knows Jim. It is likely cumulative effects coming together, but pumpkin seeds are certainly a hugely beneficial food, so you never know. I love to dry pan fry them so they are roasted and toss them into a salad – delicious!
You’re right though, they are easy to overeat if not rationed. The key is to savor them slowly. 🙂
