What do you typically have for breakfast?

Toast? Cereal? Oatmeal? Orange juice?

These are all pretty typical options, right?

Trouble is they have one major downfall in common. They are relatively high carb foods.

Sure, some people can tolerate a slice of bread here and there, or a small bowl of oatmeal. But, many can’t. It just sends their blood sugar soaring.

One of my personal favorite breakfasts is a mixed veggie omelet or veggie scramble (recipe below). I love getting a big fix of veggies early in the morning. They contain loads of vitamins, minerals and fiber and they are low in carbs.

Below you’ll find a round up of some delicious breakfast recipes to fill your diabetic friendly diet.

1. Low Carb Bircher Muesli

Made with a blend of chia, almond meal, flax, nuts and berries – this is a high fiber meal that is absolutely delicious.

2. Spinach Stuffed Tomatoes

Make a whole bunch of these ahead and keep in the fridge. Warm up when you’re ready to go for a sensational delight.

3. Mixed Veggie Egg Scramble

My favorite. Whip up a whole bunch of veggies you have on hand and scramble eggs in at the very last minute. Serve in a bowl as is or with a delicious little side salad.

4. Healthy Egg Muffins: Kale & Tomato

Egg muffins make a great breakfast on the run and can be eaten hot or cold. Make a big batch and keep in the fridge.

5. Big Breakfast Pizza

Pizza for breakfast is a real treat. This egg-based pizza is awesome!

6. Easy Diabetic Breakfast: Mixed Berry Parfait

If you do feel like a slightly sweet breakfast, try this parfait blend. It is a little on the higher carb side so is best suited for an active morning where you can burn the excess carbs off right away.

Make a mix of your favorite nuts and seeds and serve with a side of low carb fruit. Lots of healthy fats to fuel a busy morning.

    I love veggie scrambled eggs for breakfast, with spinach, tomatoes peppers, cucumbers little cheese, then I have a 1/2 small cinnamon bagel and 1/2 cup of raspberries, bluberries.
    I’ve been having a lot of problems with my blood sugars being too high, they are getting better , yesterday was a rougher afternoon and evening. I’m working hard on my eating, making better choices, I want this to all end.ive had diabetes for 16 years.

    I eat brown rice and it’s absolutely fine!

    Strawberries, blueberries, tomatoes are high carb so I won’t eat them for breakfast!

      Brown rice has far more carbs than strawberries, blueberries and tomatoes Andrew and these low carb fruits have plenty of nutritional qualities to offer too.

    I’m an early riser, before 7 usually,we sat down for breakfast before 8am. I whipped up egg mcmuffins, low carb english muffins, trimmed peameal, a cut to size slice of swiss and of course an egg. 3 hours later I’m installing baseboard and get a nasty sliver in the end of my finger, yanked it out and looked at the blood, thought why not and took a reading, hm, 5.6. not to shabby, considering.

    I understand that as long that the plant of my feet burns very bad at night keeping me from sleeping.My friend has reported the same problem. But it is better with brown rice.However the bottom line of my suestion ,does mixing food for cooking or eating change the glycemic load ?

      Yes Issie it does. For instance, when we eat a carb with a fat or protein, it slows down the glycemic index and load because it slows down digestion. Find some info about foot care over here. Also, are your levels high? This could be why you’re getting burning feet, in which case working to lower your levels is key. Brown rice, being a high carb food, won’t help.

    Does mixing high carb food with veggies and or protein lower the glycemic load of a meal.For indtance mixing rice and veggie and meat.plain rice is aroud 69.what about rice cooked With veggie and meat?

      There are certain foods a Diabetic should not eat – Rice is one of them. Swap it With califlower rice for a low carb Option.

        Very true Matt. While some people can handle a small amount (1/4 cup serve), most can’t. Cauliflower rice and veggies are a much better option!
